I think the issue is more about there being very small amounts of Indian representation at all in American media, and especially in the early 1990s.
The fact is Apu, is and has been a big Indian stereotype on a show that has spanned nearly three decades.
Granted that show is a satire that is comprised of vast amounts of stereotyped characters.
However due to lack of other representation of Indian culture and people on American television, it seems this created identity issues for young Indian Americans.
But I think that's really more on our culture overall and media executives who run it than the show itself.
Then again, we've been thoroughly white washed by our media for generations, and if Trump's era has shown us anything, there's lots of people who like it that way.
So maybe there is some validity to their grievances...or at least is worth hearing out.

For sure "Thank you, come again." has been weaponized in instances against indian kids. For sure.
That said it's overblown. More outrage. There are numerous episodes where Apu comes off as the moral center of the entire town.
Hari Kandobalu is a smart guy. I like his stand up, and I think his points here are salient and genuine, but let's not pretend like he didn't see Hannibal Burress vault in recognition by taking down Bill Cosby, so he went after a cultural icon himself to gain some more public spotlight.
That's how it works in Hollywood. Controversy, white people bicker amongst themselves about entertainment they love like its defending the honor of a loved one, aaaaaanndd profit.
And those bullied indian kids are all in med school, making bank not too interested in what garbage is currently on fox and trutv
