We made braised beef short ribs over the weekend. Those things will put you straight into a meat coma. So freaking awesome. Followed this recipe pretty closely. Used my bigger dutch oven. Only thing I added was Worcestershire and dark soy sauce. The reduction you end up with is incredible. The ribs are the best pot roast you'll ever have. We ate them over a mound of smashed taters made with butter and sour cream. Didn't have any room for salads... www.recipetineats.com/braised-beef-short-ribs-in-red-wine-sauce/

I did an Asian style with soy and stuff but hours seem better. I was happy how they turned out. I got the idea cause whole foods had them for $6/lb

I had this awesome bulgogi korean style short rib over the summer. That was the only time I'd had beef short ribs. The butcher shop here in town had them as a weekly special for $5.99 per lb and I got some. I looked at some korean braised recipes, but didn't have some of the ingredients so I found that other recipe. You can do similar recipes with pork ribs too, such as the western or country style bone in. The pork ribs are almost always available and cheaper. I might try those next.

My gf's daughter dates a guy who has a small farm. He has lots of meats that have all been raised by him on a small scale level. I asked him about beef short ribs and he said he has a BUNCH in deep freeze. I don't think it is a big seller for him. People don't know what to do with them, I guess.

Ugh beef short ribs are so fucking good. Braised for a few hours and served over mashed potatoes or polenta is like the perfect winter weekend dinner.
I much prefer the English cut to the Flanken style though.
