Over cooked by a couple minutes what is your crust recipe. It looks legit and delicious I made a poolish as a starter. 200g of water, 5g honey, 5 g yeast. mix until combined add 200g of flour (preferably 00 high protein like cupoto) Let it sit out for 15-20 minutes then put it in the fridge sealed for 16-24 hours. The next day take out the poolish and add 20g of salt, 300 g of water. and 500g of flour. Kneed for 10 minutes and let it rise for a while until doubled. Make it into 3-4 balls. and set them on a flat floured surface covered in a damp cloth for antoher hour or two. Forming them into a pie is hard so do you best but if you kneed'd it enough it should stretch well. Cook it as hot as you can. My oven only goes to 550 but it works. If you want to save a dough ball cover it in oil and put it in a zip lock in the freezer. This pie was from a frozen ball.

My daughter likes making those crissiont rolls that come in a tube. She recently started rolling some dark chocolate chips up in them before she bakes them. I'm thinking about trying the same thing but instead of baking them, frying them and tossing in powdered sugar when they are done. Could be FKT level munchies.
