Staying at the base of Mt. Etna. It erupted last week and ash is everywhere. We say ash but it is light and large like pumice sand and it crunches under your feet. It looks like there's a cloud at the peak but that is the smoking crater. Ash covered chairs around the fire pit

the weather is beautiful right now. Apparently it was hot last week but it's been 70s and lower 80s. Sicily is a bit milder because of the elevation so it's like Hawaii with the vegetation of SoCal.

Last pic from Roma Sparita ristorante. Sorry for blurriness. Spaghetti carbonara in front and cacio e pepe (cheese and pepper) in the back. See that bowl? It's made of crusted parmesan. Incredible. Put my wife on to Chiante too, she's been in a wine rut with cab sav and Nero d'avola

I tried making it three times this past year, and almost got it right on the third. I’m also drooling right now.

Cases are relatively cheap

Went to the swanky fashion district in Rome (think Rodeo drive) near the Spanish steps and hit a restaurant called Ginger. Despite being surrounded by Prada and Gucci boutiques the prices were still reasonable. Rigitoni carbonara. The other place beat this by a mile. The pasta was perfect but the sauce was crazy salty so much so that it seemed like a mistake. Linguini in cherry tomato and basil sauce. This was da real MVP. From now on this will be my gold standard to compare all other tomato sauces. pork sandwich. Delicious simplicity, tender meat, crispy bread and I think bean sprouts.

Not my pic but this is the place. That's it for Rome. We ate some other things like baccala fritta (fried salted cod fish) which was awesome and Little bear ate half a steak next to the Pantheon while I quaffed ale in a big German mug but we didnt snap any pics. More from Sicily soon...

Y'all. Sicily F U C K S Homemade meal by our friends. Penne with pistachio pesto, chicken filets, caprese (before olive oil added) and local sausage sausage up close. Cheese inside! We went across the island and stopped in a rural area. This is at a gas station! They take their food seriously here. I had il piccante which is a soppressata and cheese sammy (long boi center right) Nougat with almond for dessert beef lasagna with peas inside Eggplant left and caponata right. Homemade syrah from our villa host! eggs with mango and onions for breakfast And thin sliced speck
