Making a beef stew...Will be first red meat Ive had in like 6 months...lol...
Its been simmering all day...Has carrots, onion, all manner of seasonings of course, splash or 2 of red wine, but then over rice....Will be FKT
Just gots to have me some stew in the Fall

Maiden voyage on the new que I bought a cheaper bullet years ago and never really cared for it because I felt like it needed an adjustable vent on the bottom. I had thought that I might try to modify it, but now I have the other smoker. That looks real nice.

I have a cheaper bullet and it required some modifications to work well. I drilled a ton of holes in the charcoal pan at the bottom for more air flow and modified the legs so I could lift the whole smoker off the charcoal pan so that I didn't have to try to insert new charcoal into the little door on the side.

My old one seemed to have enough airflow. It would keep 210-220 for 8 hours or so. I would just do the reverse cone of charcoal and you never really had to mess with it. You could never pull off a brisket though.
