Cooked a goose on NYE
Made a stock with the carcas yesterday. Making a pho-inspired goose soup for dinner tonight. The goose was rubbed with Chinese five spice, anise, togarashi, etc. so the pho vibes were already there. House smells amazing. Can’t fucking wait to eat this

ive heard of an xmas goose but never heard of someone this century making one. lol my wife and I have joked about making it for years. Last year we tried it for the first time, gave it another go this year. Will def keep it a tradition. Probably not on Christmas though - you don’t get a lot of meat off the bird. A 10lb goose feeds 5-6. So both years we’ve cooked it with a smaller group of friends after the holidays. Highly recommend trying it, great bird. Almost eats like a roast beef more than poultry |

I’m making chicken and dumplings tonight. But it’s more of a thicker broth with cornmeal dumplings not pasty flour bombs like people are used to.
