Well, I take most to the butcher, but I make my own jerky. The only specialty stuff that my butcher does is sausage...and he makes damn good sausage, but then again, so do my friends and I.

A friend of mine got a bunch of meat turned into cheese filled hot dogs and they were really good...but that extra processing gets spendy quick.

But anyways, next time I make jerky I'll have Timmer come over with his vac sealer and I'll make up a couple packages for you. I still have a bunch of ground venison from last year and I plan to make jerky with it soon.
I have this sweet jerky gun that is basically a caulk gun that shoots out meat strips right onto the trays of my dehydrator.

im suprised your butcher doesnt do sticks if hes a big deer guy. they are like the most popular in wisco -He's a friend that does all his butchering out of his garage. It's basically him and his son, and he processes so many deer each fall that he mostly focuses on basic cuts. He does a really great job of removing silver skin and not leaving hair on the meat and stuff though, plus he's like $20 cheaper than any of the actual butchering businesses nearby. |

Oh yeah, the other thing about going to commercial butchers is you're never sure if you're getting your own deer back...
This guy will process one deer from beginning to end so there's never any question of whether or not you're getting your own deer.

This guy will process one deer from beginning to end so there's never any question of whether or not you're getting your own deer. ^^ That first part could be a problem this year with the warmer temps. Dont want to get meat from that some guy has had in the the back of his truck for a day and half making sure he's showing all his buddies. |

There is not a lot of good mexican food in my area.
One place opened up near me lately that seems popular but I've heard varying things about the quality.
