I was poking around pinterest and saw a not vegan version of of mac n' cheese with a Mexican twist with chorizo and beans and corn and stuff.
My local go to vegan restaurant does a walnut version of chorizo that I like, and I've founds some interesting mostly raw food mac and cheese "cheese" recipes on there.
So, I think I might go ahead and try to make a vegan version of that Mexican mac n' cheese.
There's lots of outside elements that I have never tried making before.
It could be a colossal failure.
But it could also be pretty good.
My schedule is open today...so...lets find out.

this seems like the right place to notify the world that chicken fat really grosses me out. it smells, feels, and tastes terrible. i remember when chicken legs only had that one stringy piece of fat and nowadays the ones i get have like 6 veins of it running up and down the leg. thats the kind of stuff that makes me want to stop eating meat again.... according to this study, 10% of vegetarian food tested had meat in them, and several had human DNA. snopes has a fact check article about this study, but the server is down so its not accessible right now. hemp seeds are such a powerful food and so healthy.
no real downside that ive found.
i eat a big bowl of hemp seeds, chia seeds, ground flax seed and sometimes sesame seeds mixed with cinnamon and stevia. yummy and full of good fat, good protein.

I wonder if in the near future, meat products are going to get a similar treatment as cigarette products. They kind of have similar historical standpoints. Back in the 1950's people were like, "Sure, cigarettes gives your throat and lungs a good thrashing, but they don't cause cancer." Then medical science started disagreeing with that standpoint, and eventually this became a commonly agreed upon known thing, with surgeon general's warning labels, and PSAs about this health risks of smoking. It seems like right now the public opinion is somewhere along the lines of, "Sure, red meat clogs your arteries with cholesterol, but it doesn't cause cancer."
