In a blender... •1 cup raw cashews •1 can coconut milk •2 cloves garlic •1/3 cup nutritional yeast •2 tablespoons tahini •3 teaspoons lemon juice •1 teaspoon turmeric •1/8 teaspoon cayenne red pepper •1/8 teaspoon smoked paprika •1/4 teaspoon salt •1/8 teaspoon pepper

'Cheese' Cake... •2 tubs of vegan cream cheese (I use Tofutti brand) •1 349g/12 ounce pack of firm, silken tofu •1 ¼ cup granulated sugar •1 tablespoon vanilla essence •Juice of one lemon •Zest of one lemon •1/4 cup almond or soy milk •1 teaspoon arrowroot (or corn starch) •1/2 cup flour Put everything in a blender except the flour and starch and blend, then when pureed, add the flour and starch and blend again. Cook at 325 for an hour. Turn off oven and let sit in oven for half an hour. Then take out and let cool. Then refrigerate 4-6 hours or overnight.

I am not a fan of tofu but I can only recall having it in hot & sour soup. I just eat around it.

Over the same period, the total number of cows and pigs raised on US farms actually fell a bit, and the number of chickens held steady. What that's telling us is that US meat production got dramatically more antibiotic-dependent over that period.
