beans obvi. usually use 2-3 types of meat, and if one of them can be smoked, adds some good flavor.
a few people in the chili comp at work added cinnamon to their chili. wasn't a big fan. i like my chili like i like my women, spicy.

Tomato or no?
Thyme is a good herb.
You kinda have to fuck it up a few times to find your lines.
Add a chunk of cinnamon and take it out early once there seems to be enough

Not sure about the cinnamon, and I've never heard of pineapple.. but I'm intrigued.
I make good chili, but I admit I dont have a recipe I just look a new 1 up every time. Just go with cayenne and chili powder. You can get smoked in both which is good. I dont like it too smokey though.
Corn is good but I dont add it every time.
I like celery in mine too

Figuring you're going to simmer/slo-cook the dog snot out of it, canned pineapple's fine. In fact, a can of crushed and a can of chunk ... fresh jals for the heat, though. And cashews. I kid you not - it's the right thing to do.
Bottom line: don't be scared.

Bear's Award Winning Pineapple Chili
2 lbs steak or ground beef or protein of choice (use lean beef or cook and drain most of the grease. Sear steak if desired) 2 onions diced 2 bell peppers diced 4 cloves garlic minced 1 can of beans drained and rinsed 1 20oz can of diced pineapple 1 15oz can of tomato sauce 1 14oz can fire roasted diced tomatoes
1/4 cup chili powder 1/2 tbsp salt 1 tsp cumin 1 tsp garlic powder 1 tsp onion powder 1 tsp black pepper 1 tsp white pepper 2 bay leaves Dash of dried herbs Squeeze 1/2 lime Cayenne and red pepper flakes to taste
Throw it all in the crock pot Top with green onions
