Diced pork butt sauted with onions and garlic. Fresh roasted hatch chili's. Diced tomatoes. Salt and pepper. Simmer until your patience is gone and it's time to eat. Some people add cumin, I usually do not. I do occasionally add a diced jalapeño while cooking the pork but not necessary.
This is what is referred to as green chili in southern Colorado and New Mexico. Far superior to red chili (which is still great).

The peppers and tomatoes should be peeled. I also forgot that the pork should be covered in flour and browned. Also forgot water to bring it to a not quite as thick as gravy consistency.

We top our chili with ditalini. When people people come over for chili they pretty much always leave saying next time they make chili they’re doing ditalini. I love putting a can of smoked lager / schwarzbier / Rauchbier in the pot

I would add pistachios to chili. I haven’t tried that but I would. Twice. No thanks on the pineapple or cinnamon in chili.

But I really really like chili and there is no part of me that thinks it could be improved by adding fruit. Pineapple pizza nope, pineapple ham nope. I did try a pineapple habenero mead that was pretty good. But not as good as mead without habenero.

The litmus test is if you can eat corn in your chili. Sweet and salty is a tried and true combo. Corn is the same thing - it adds sweet to the savory.

Not my all time favorite (that would be spicy Fra Diavalo), but it's a regular in my salsa lineup.
