I'd think the idea of dumping more $ into your car restoration project than you'll ever recoup at resale is to keep the car for a long enough period where you feel you got your money's worth of enjoyment out of the money you've spent that you won't recoup.
Don't make sense to me to spend a whole bunch of money to fix up a car and then sell that car at a loss without really having had it for long enough to get that enjoyment. Losing a few grand but owning the car for several years is one thing, but dumping a bunch of $ into a car to quickly resell it as a loss.....
